Adiemus, one-hit wonder of the 90s, actually had a number of albums through nearly 20 years. They fused classical orchestra with jazz, latin, world and new age elements to a unique music that sounds like a filmscore for a fantasy movie. Here's a nice selection. I included some songs of the singers' side projects too, South African-British singer Miriam Stockley as well as Finnish trio How Many Sisters (Anna-Mari Kähärä, Mervi Hiltunen and Pirjo Aittomäki).
